An Amsterdam Secret of the Senses
In the heart of Amsterdam’s old city, behind an unassuming façade, lies Bellezza—a fine dining sanctuary where nature herself seems to guide the menu. This is not merely dinner. It is a multi-sensory odyssey across Earth’s realms, each plate an ode to her abundance, each course a chapter in a story told through flavor, light, sound, and scent.
The journey unfolds in six elemental acts—beginning with The World and flowing through The Ocean, Under Ground, Fresh Water, Above the Ground, and The Heaven. With every dish, the dining room transforms. The walls become forest canopy, rippling water, or deep-sea currents. The ceiling dissolves into stars. It is not theatre about food—it is theatre through food.

Chef Profile — Davy Van Wezel
Bellezza gave Davy Van Wezel his most ambitious challenge yet: designing a menu in collaboration with artists for a restaurant where sight, sound, scent, and taste intertwine into a single living experience.

The World — A Unity of Realms
Before the elemental journey begins, Bellezza invites guests to witness Earth as a whole. The room glows with a slow-turning projection of the planet, clouds drifting lazily across continents, oceans shimmering in soft light. A hum—part heartbeat, part cosmic resonance—fills the air.
The plate consists of cream of pepper, cauliflower, and feta, accompanied by crispy tomato, onion, and pickles. This is the first secret of Mother Earth—that all her realms are part of one living whole.

The Ocean — Cradled by the Deep
A rush of salt air greets you. Whale song mingles with gull cries, and the dining room blurs into a horizon of rolling waves. The ocean bounty offers seabass tartare with spring onion cream, finger lime, cucumber, and seaweed vinaigrette, served alongside sourdough bread and Bellezza butter. Here, The Ocean is not just nourishment—it is protection, rhythm, and embrace.

Under Ground — The Hidden Networks
Lighting dims to a warm, earthen glow. The sound slows to the beat of a resting heart.
The Under Ground: carrot with vadouvan, cream of fermented garlic, emoli mushrooms, and olive crumble. The wine pairing is Weingut Thorle Kalk & Kreide Chardonnay, Weissgurgunder 2023, Germany. Flavors run deep and patient, echoing the silent work of roots. Projected root threads crawl across the walls, revealing the vast unseen networks sustaining life above.

Fresh Water — The Pause Between Moments
A low-lit moving corridor of 3D artwork along the walls with the sound of trickling water guides you forward. The air smells faintly of mineral springs.
Served on a warm stone plate, Fresh Water features slow-cooked salmon trout with beurre blanc of eel, Qsietra caviar, sweet potato, white lime, and watercress, paired with Bela White Rebula, Malvasia 2021. Patterns of sunlight ripple across the table, mimicking the gentle flow of a stream.
Fresh Water is more than a taste—it is a pause for breath and renewal.
Above the Ground — Into the Forest Canopy
From the wholeness of The World, your senses rise into the forest canopy. Morning light filters through leaves, accompanied by the distant rustle of branches and birdsong.
The dish: lamb fillet with artichoke, parsley hollandaise, salted lemon, and pistachio crunch finished with gravy of ras el hanout, paired with Valtuille Mencia 2021. Projections dance like sunlight on moss; an owl peers curiously from a branch.

The Heaven — Among the Stars
Your journey ends in the sky. The ceiling dissolves into constellations and ribbons of aurora light. The Heaven is a cremeux of raspberry with strawberry cream, rhubarb, white chocolate, beetroot, and cotton candy, paired with Allice Bel Colle Brachetto 2023, Italy. A gentle choral score swells.
It is not a faraway dream—it is a reminder of our place in the cosmos.
A Celebration Beyond Dining
Bellezza is not simply a restaurant—it is a celebration of life’s interwoven beauty. Each course honors an element of nature while connecting it to the greater whole. It’s rare to leave a fine dining table feeling both full and deeply moved. Here, indulgence becomes an act of reverence, and every guest departs carrying a piece of the Earth’s quiet magic.
